Appetizers and Snacks -- Day 2

Spinach Artichoke Dip

1 - 10 oz. package chopped, frozen spinach
1 can artichoke hearts
1 - 8 oz. package cream cheese
½ cup mayo
2 cloves garlic, grated or crushed
½ small yellow onion, finely chopped
¼ cup shredded Parmesan cheese
4 oz. shredded Monterey jack cheese

Melt cream cheese in microwave.  Add spinach that has been thawed and squeezed dry, chopped artichoke hearts, mayo, garlic, onions and Parmesan cheese.  Combine, spread in baking dish, top with shredded Monterey jack cheese.  Bake at 375 for 15-20 minutes or until golden brown and bubbly. Serve with pita chips or tortilla chips.
