What's for dinner tonight? Grilled Chicken & Southwest Cous Cous

Back from a week in Mexico so it is time to start eating healthy to take off these vacation pounds.  Tonight we are having a super healthy and yummy dinner.  Grilled Chicken marinated in Lawry's Baja Chipotle marinade and Southwest Couscous.  This couscous recipe is a favorite of my family.  It makes a huge batch but they will snack on it for the next two days and it will be gone.  So yummy and summery.  Plus it is great a little bit warm right after you make it or cold from the fridge.

Southwest Couscous

1 2/3 cup dry couscous
1 can chicken broth
3 T. lime juice
1/4 cup olive oil
1/2 T. red wine vinegar
1 tsp. cumin
1 can black beans, rinsed and drained
1 can corn, rinsed and drained
1 red pepper, chopped
5 green onions, sliced
1/4 chopped cilantro

Bring chicken broth to boil.  Remove from heat, stir in couscous, put on lid and let rest 5 minutes.  Meanwhile put all the vegetables and the cilantro in a large bowl.  Mix lime juice, olive oil, vinegar and cumin.  Pour over veggies.  Fluff the cous cous with a fork and toss with dressed veggies.  Serve right away or chill.
