What's For Dinner Tonight??? Southwest Chicken Salad

This is one of our favorite summer recipes and a great way to use up left overs.  You can make it with leftover chicken fajita meat and throw in any number of veggies you have on hand.  Tonight I grilled chicken which I'd marinated in Lawry's Baja Chipotle Marinade.  The salad ingredients:

Romaine
Red Onion
Red Pepper
Canned Corn (drained -- about 1/2 can)
Canned Black Beans (rinsed and drained - about 1/2 can)
Avocado -- diced

The dressing is a mixture of 1 part salsa to 1 part bottled Ranch dressing.  The other toppings -- shredded cheddar cheese and crunched up tortilla chips!  Yummy! 

Other salad toppings:  black olives, jalepenos, taco meat instead of chicken, fajita steak meat, fajita shrimp, any color peppers, green onions, tomatoes.
