A few days ago I gave you a dinner idea for the chicken sausages from Sams (or Costco or Walmart). Well these little sausages have become a staple in our house. A few nights ago I prepared them a different way. I don't have any pictures but it was so yummy and reheated for lunch yesterday really well.
In a large skillet heat some olive oil then saute 5 or 6 large mushrooms, sliced (you can use white or baby bellas) and 1/2 a yellow or red onion sliced. The slice one package of the flavored chicken sausage (I used the asiago spinach) in half length-wise and then in slices to make little half moon shapes. Add to pan with sausage and mushrooms and saute until browned. Add a jar of your favorite pasta sauce and simmer with lid until pasta is ready.
Boil 16 oz. of Penne pasta according to package directions. Drain and while it is still hot dump it into a 9x13 casserole dish. Then top the hot pasta with an 8 oz bag of shredded mozzarella cheese and then with the hot meat sauce. The pasta and the sauce will melt the cheese for you. Top with some grated parm and you've got a yummy dinner.
Serve with a salad and you've got a whole meal!
